The beginning at Leiths School of Food and Wine   Sept 2012 –  June 2013

A brief introduction about the start of my food career and how GBchew was born. I trained at Leiths School of Food and Wine, in London where I received my diploma. Each day brought fresh ideas and challenges whilst we were able to indulge in a wide range of foods from huge haunches of roasted venison to delicate coffee Genoise sponges. My love of fresh homemade food came early on from my Mother’s love of cooking. I was very lucky to grow up in the English countryside where there was lots of delicious locally sourced produce available. Sadly during my training the amount of rich food and refined sugar we were munching every day was actually starting to give me headaches.

This was the catalyst behind my drive to develop snacks that were genuinely natural, substantial and rich in flavour. After Leiths I worked as a private chef in London and Switzerland, as well as looking for spots to have a market stall in London to test my recipes…. so along came the Green Bean Van.
